In Africa, each people group has its own favorite sauce that is prepared for meals to welcome visitors. I invite you to discover Moringa, our people’s favorite sauce in Central Africa.
Moringa sauce is extraordinary. The Moringa leaves provide its savory flavor and are rich in protein and vitamins, including calcium, magnesium and iron. If you can’t find fresh leaves at your store, you can purchase dried, chopped leaves online.
To make some, you will need the following ingredients:
1.1 pounds (500 grams) of Moringa leaves
Four medium fish (or fish substitute)
Two bell peppers
Two onions
About one cup (one-quarter liter) of oil
Directions:
Cut the peppers and onions into small pieces. Set them aside.
Wash and boil the Moringa leaves.
In a saucepan, fry the onions and peppers in oil, simmer for a few minutes, then add the fish or your choice of meat substitute.
Remove the Moringa from the water and dry it thoroughly.
Add the Moringa leaves to your saucepan and cook for 20 minutes. Salt to taste.
After 20 minutes, voilà, your Moringa sauce is ready to serve atop your choice of rice or cooked cornmeal, and cooked root vegetables such as yams or cassava (also known as yuca, manioc or tapioca). Delicious!
